Some days I wonder why I have to be so stubborn. There’s a reason there aren’t more café/restaurants like us. We cater to a very small niche. Plus our (profit) margins are even lower than industry standards. Too bad I never liked to do what everyone else was doing. My Buddhist up-bringing and college years guilt tripped me into thinking: whatever I do, it better be of service to others! What we’re doing at the shop is the start of a dream job. I’m working with food as my tool to make our community healthier and happier.
100% organic, vegan and gluten-free are important standards to me. Organic farming goes back to how farming should be. The prevalence of cancer and metabolic diseases is no mystery when you see the amount of GMO’s and processed foods the world is consuming. I firmly believe food as medicine. Organic combined with plant-based eating is a recipe to thrive. Along with food, animals are my other great love. I do not wish a career where other living beings are harmed as a result of my work. I understand eating vegan may seem difficult, until you find that friend who feeds you plant-based deliciousness and changes your perception. If you don’t know someone like this, I want to be that friend! I have been vegan for the past 9 years and vegetarian before that since I was 13. I’m nearing 39, but I don’t feel the typical signs of aging. If you don’t feel the same way about animals as me, maybe I can lure you with the fountain of youth!
I’m personally not always gluten-free (I love a good fresh baked bread), but choose to keep the shop gluten-free for anti-inflammatory and cross-contamination reasons. My longtime boyfriend of 14 years, Tommy, will be 51 soon. His arthritis and years of playing sports caught up to him. Cutting out the gluten made him feel agile and pain-free. Cutting out meat (he still eats fish and eggs on occasion) and drinking green juices every morning helped his gray hair grow back brown. More of his wrinkles faded away. His skin began to glow when he replaced his meals with plant-based food from P.S. & Co.
Gluten-free is the hardest standard to uphold in the shop, it’s also what drives our costs. Organic and vegan are easy, but add the third component, and most businesses will run the other direction. At P.S. & Co, I want to provide all of you with indulgences you wouldn’t do for yourself.
