Happy Meatless Monday!! We know we know, Monday’s can be rough but here at P.S. & Co they’re a breeze. Need a little something to brighten up the start of your work week? Stop in for a fan favorite, the Pesto Caprese.

Aside from being absolutely delicious the Caprese is chock full of protein, fiber, and good fats. This guy has been a staple on the menu for a long time now, one bite and you’ll see why!

The Pesto Caprese consists of two slices of gluten free bread, our creamy pesto, a hearty serving of avocado, thick slices of fresh tomato, and our famous house made cashew miso cheese. The bread alone boasts 4 grams of protein and contains sprouted super food essentials like quinoa, millet, and chia seeds. In total you’re looking at about 8g of protein, and about 13g of fiber. Fiber is super important for heart and digestive health not to mention the role it plays in satiety. Protein enhances satiety while also encouraging thermogenesis, or fat burning, in your body.

This combo will keep you feeling full all day long! In addition to these macro nutrients, avocados are a good source of micronutrients omega-3 fatty acids, vitamin B6, and vitamin C. Omega-3s are an integral part of cell membranes and thus are vital to the health of our cells. B6 helps support adrenal function, making it useful in maintaining healthy stress responses in the body. This multitasking B vitamin also plays a key role in converting carbohydrates to energy. Last but not least, the hefty dose of vitamin C provided by the Pesto Caprese, helps to bolster and maintain immune system function.
