It's that time of the week again! This Meatless Monday just so happens to fall on everyone's favorite junk food holiday, Halloween. Since Halloween is all about the tricks and treats, we thought we would give you all a little insight into how our amazing cakes are made.

If you have ever tried to bake with nut flours at home, you know they can be a dense and heavy substitute to traditional fours. Ever wonder what makes ours so light and fluffy? We use pulp from our house made nut milks as the base for ours! This process removes much of the fat which can make store bought nut flours so difficult, and it helps us reduce waste. I bet you didn't know even our flours are made in house. As far as our fan favorite carrot cake goes, we mix in carrot pulp and apricot for that hint of sweetness. My favorite part of any cake is the icing. Lucky for me our icings are decadent and nutrient dense! We make them with coconut meat and coconut oil. Never any processed oils or junky substitutes here. Both our icings and our cakes are sweetened naturally. A touch of maple syrup or a pinch of unrefined coconut sugar is all it takes. When you work with real organic ingredients, the natural sweetness of each component comes through with just a tiny bit of help. Every luscious layer of our cakes contains house made, wholesome ingredients.

Now that we've covered what makes them so delicious, let's talk a little about what makes them so nutritious. Nut flours are high in protein and heart healthy fats. Getting a serving of nuts in everyday has been a proven way to improve cardiac health long term. The coconut in the icing is also full of good fats! Coconut contains medium chain triglycerides which are arguably the best source of sustained energy for the body. Between the protein from the nut flours and the MCTs from the coconut oil our cakes will keep you full and energized all day with no crash. As a matter of fact, our incredible founder, Andrea Kyan, and her trainers all agree that a slice of our cake is the perfect snack before a long intense work out.
