Meatless Monday: Amaranth Porridge

Just another Meatless Monday. Temperatures are really starting to drop so it's a good thing the bowls are back in town! Today we'll be focusing on our amazing breakfast bowl and what makes it such a fantastic way to start your day. 

In lieu of a traditional oatmeal, at P.S. & Co. we chose to use a more nutrient dense grain, Amaranth, as the base of our warming breakfast bowl. The Amaranth Porridge is topped with a sweet pineapple chutney and crunchy pecans. Amaranth is a high fiber grain packed with easily absorbed protein, iron, and vitamins. One cup of amaranth contains 5 grams of dietary fiber which is equal to about 20% of your Daily Value. Fiber is important for keeping you regular, improving the health of your digestive tract, and supporting heart health.

The protein in Amaranth is highly bioavailable. This means that it is more easily absorbed by the body than the protein found in other plants. As a matter of fact it has been compared to the digestibility of cow's milk, so we can leave that to the baby cows and have our porridge instead. Our breakfast bowl contains about 9 grams of this protein! As far as amino acids -the building blocks of proteins- go, amaranth is rich in lysine. Lysine is an amino acid many people are deficient in as natural sources can be a bit tricky to come by. Since lysine helps the body build muscle, absorb calcium, and turn food into energy it's a good thing Amaranth is a rich source.

As far as vitamins and minerals go, one serving of our porridge contains approximately 15% of your daily B6, 28% of your daily iron, and a whopping 40% of your daily value of magnesium! Pairing your iron with vitamin C helps increase absorption by 30%, which is where the dollop of pineapple comes into play. Every aspect of the Amaranth porridge is specifically designed to deliver you a breakfast that will keep you full and energized all day long!
